Our executive Chef Darina Brennan not only works with large suppliers but small independent suppliers to source a range of excellent Irish ingredients. Darina works with her chef team to ensure all hotels, whether based in Cork, Galway, Belfast, Dublin or the UK that all chefs create menus using fresh and locally produced ingredients

Our Fish Suppliers

Working with local fish suppliers is something Maldron Hotels prides itself on. With a fish supplier in each province, we are able to ensure the freshest of fish dishes reaches your table. Ewing’s in Ulster, Kish Fish in Leinster, Galway Bay Seafoods in Connaught and the Good Fish Company in Munster. Working with these suppliers means fresh seafood arrives daily at our hotels. Our chefs regularly take part in fish masterclasses hosted by our suppliers so that our guests can enjoy the wonders of the Irish sea.

Our Beef Supplier

Certified Irish Hereford Prime is a globally award-winning beef breed. In partnership with Pallas foods, we work with Hereford farmers across Ireland. Our chefs ensure the right cut and best of beef is used, so you can enjoy a beautifully cooked steak.

We also work alongside many other brilliant small independent suppliers that supply us with cheese, jam, chicken and handmade sausages. Some of these suppliers are companies like Goatsbridge Trout Farm, G’s Gourmet Jam, Jane Russel handmade Sausages, PaddyO’s cereals, Manor Farm free-range chicken, Cashel Farmhouse Cheesemaker and Ardsallagh Goats Cheese.

Penny Loaves, one our authentic suppliers provide award Winning mini breads made to age old family recipes using premium, natural ingredients. Convenient, consistent and the easy solution to reducing your bread waste!

Created in the Heart of Ireland by 3rd generation Master Baker, Cathal O’Donohue of O’Donohues Bakery, the Penny Loaves are made to age old recipes and traditional baking methods using fresh Irish ingredients. Products that fall under the Penny Loaf Co. brand are specifically created for today’s ever changing and demanding food service sector.
