Our executive Chef Darina Brennan not only works with large suppliers but many small independent suppliers to source a range of excellent Irish ingredients. Working with these local suppliers is something Maldron Hotels prides itself on. With a selection of fish, meat, fruit and vegetable, cheese and diary suppliers in each province, this enables us to ensure the freshest of produce reaches your table. Darina works with her team of chefs’ to ensure all hotels, whether based in Cork, Galway, Belfast, Dublin or the UK, that all chefs create menus using fresh and locally produced ingredients. Our Beef Supplier

Certified Irish Hereford Prime is a globally award-winning beef breed. In partnership with Pallas foods, we work with Hereford farmers across Ireland. Our chefs ensure the right cut and best of beef is used, so you can enjoy a beautifully cooked steak.

We work with Heaney Meats Catering Ltd on a range of Irish Angus Steak products and our most successful project to date is the exclusive supply contract for our Irish Angus Steak Burger which is made from a combination of lean Chuck Steak mixed with Rib Cap with its natural fat and nothing else but seasoning to produce the Signature Irish Steak Burger

Kish Fish

Kish Fish is a family run business which was established in Dublin in 1966. As a progressive seafood supplier, we are delighted to be in partnership with the Dalata Group for past 4 years. At Kish Fish, our primary aim is to supply the highest quality seafood at competitive prices. We work with an extensive list of trusted partners who supply the best quality fish and shellfish from around Ireland’s coastline and beyond.

We operate from a state-of-the-art premise in Dublin and are approved by the Sea Fisheries Protection Authority. In addition, we also hold a BRC -certified processing facility. We are committed to responsible sourcing and sustainability. We are excited to launch our Organic Smoked Salmon and have spared no effort to ensure that our smokehouse in Howth, the heart of fishing in Ireland, brings your customers the finest, freshest quality Irish organic smoked salmon.

Paddy O’s

Have you had our vitality breakfast yet? Be sure to taste our delicious Paddy Oats Granola & porridge. Specifically chosen for our hotels by Darina our head chef Paddy O’s is a fantastic Irish success story.

Working with the Dalata Hotel Group for the past three years, they are our sole supplier of porridge oat flakes; with all oats being sourced from local farmers and milled in Portlaoise, Co Laois. Try it with fresh fruit salad, delicious yoghurt and berry compote or have a bowl of hot porridge with seeds and honey to set you up for the day.

G’s Gourmet Jam

A truly dynamic family run business set up as an alternative farm enterprise situated near the heritage town of Abbeyleix, Co Laois.  Twenty years ago, Helen Gee’s passion for food saw an opening to bring her family recipes back to life, and from her kitchen she started to build a brand that came from the heart. G’s Gourmet Jams are made with only the highest quality and all-natural ingredients to ensure her time-honoured recipes taste just like “Granny used to make”.

G’s Gourmet Jams nostalgic taste and high quality has resonated with consumers and with their continuous support the business has grown steadily over the years in both the retail and food service sectors. Our retail and food service range of products are available in local café’s and speciality food shops around the country, in many 5-star hotels and all major supermarkets.  With the success of the award-winning Jams, Marmalades and Jellies, a savoury range of Chutneys, Relishes, Sauces was added too.

Cooleeney Farm Cheese

At Cooleeney Farm the fourth generation of the Maher family work the land. Our pedigree Friesian dairy herd is the main enterprise and animal husbandry and breeding receive Jim and Pat’s careful attention. The first recorded award for quality milk is noted in 1905 records. Our farm continues to receive national and international awards for cheeses.

Quality is the keynote at Cooleeney. The cows are kept in a clean healthy environment. They enjoy the best of green pastures and carefully selected feed to ensure milk of the highest possible quality for the production of artisan cheeses. The Friesian dairy herd is a closed herd and all replacement animals are bred on the farm. This practice helps to reduce the risk of disease in our herd.

Coolhull Farm

Coolhull Farm is a family-owned Irish company. Founded in 1990 by Tomas Murphy who began making ice cream using a classic Italian recipe on his dairy farm, Coolhull Farm, in Wexford under the Paganini brand.

Today the company still specialises in dairy and makes a full range of premium ice cream and desserts using the raw milk from Coolhull Farm.
