Our executive Chef Darina Brennan not only works with large suppliers but many small independent suppliers to source a range of excellent Irish ingredients. Working with these local suppliers is something Maldron Hotels prides itself on. With a selection of fish, meat, fruit and vegetable, cheese and diary suppliers in each province, this enables us to ensure the freshest of produce reaches your table. Darina works with her team of chefs’ to ensure all hotels, whether based in Cork, Galway, Belfast, Dublin or the UK, that all chefs create menus using fresh and locally produced ingredients.
